This courgette is a very popular Italian market variety. In contrast to the requirements of the large agricultural industry and supermarkets, this courgette was selected with a focus on appearance and, above all, flavour. The plant does not yield as much as other varieties, but its flavour is in a completely different league. This distinctive variety has a slightly nutty and aromatic flavour. When young, the fruits have light-coloured, protruding ribs, which results in an attractive star-shaped cross-section and probably gave the courgette its name. Costata romanesco means something like ‘ribbed roman’ or ‘roman rib’.
